From Binging with Babish, Ten Levels of Chocolate Chip Cookies

Ingredients


Dry Team

  • 1 cup AP flour
  • 1 1/4 cup bread flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Wet Team

  • 1 cup (2 sticks) Browned Butter
  • 1/2 cup white sugar
  • 1 cup dark brown sugar
  • 2 eggs plus 1 egg yolk
  • 1 tsp. vanilla extract
  • 1 Tb. finely ground hazelnut coffee (espresso grind)
  • 4 oz. Nestle semi-sweet
  • 4 oz. 60% cacao baking bar, chopped irregularly

Instructions


Brown the butter and let cool. Mix together dry team ingredients.

Cream butter and sugar. Add vanilla and coffee. Add eggs alternately with dry team until just combined. Add chocolate and mix.

Chill in refrigerator at least overnight or up to 3 days.

Bake at 350°F (convection, always convection) for 14-16 minutes, rotating halfway through.
