Quick (you can make it while the Chili is simmering), simple and very forgiving. One time I eyeballed all the ingredients and it came out fine.
Preparation
Preheat the oven to 375°F.
Grease either:
- an 8x8 baking pan
- a 10-inch cast iron skillet
- muffin tins
Ingredients
Dry Team
- 1 cup AP flour
- 1 cup yellow cornmeal
- 1 Tb baking powder
Wet Team
- 1/4 cup packed brown sugar
- 1/4 cup neutral oil
- 1/4 cup honey
- 1 cup whole milk
- 2 Tb butter (you can do half cream, half milk instead of butter and whole milk)
- 2 large eggs
Tip: if you add the wet ingredients in the order listed, you can get away with dirtying only one measuring cup.
Instructions
Like any quick bread, combine dry and wet teams separately then together.
Bake until golden brown, probably 20-25 minutes for a single loaf or 10-15 minutes for muffins.
Apply generous amounts of butter and honey.
