* 1 pinch saffron (optional, put it adds some depth of flavor and color)&lt;br /&gt;
* 1 quart chicken stock&lt;br /&gt;
* 2 handfuls dates, chopped&lt;br /&gt;

Put the oil into a heavy-bottomed pot or Dutch oven and heat on medium-high. Add half the pork and sear until it has some good color on it. Stir only occasionally. Add the onions and the rest of the pork and cook until the onions are soft and threatening to stick to the bottom. Add the ginger, garlic, turmeric, and saffron and cook another 30 seconds until fragrant. Add chicken stock and just enough water to almost cover.&lt;br /&gt;
&lt;br /&gt;
Simmer on low with the lid cracked for at least 45 minutes. After 20 minutes, add the dates. It&amp;#039;s done when the dates are more or less melted into the stew.&lt;br /&gt;
&lt;br /&gt;
Serve over rice.&lt;br /&gt;
